Ingredients muffins :
-1 scoop Iso VanillaÂ
-1/3 cup calorie-free sweetned
- 1/3 cup flourÂ
- 1/3 cup coconut flour
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp gingerÂ
- 1/4 tsp clovesÂ
- 1 cup gated carrots
- 1/2 cup milk of choiceÂ
- 1/2 applesauce
- 1 tsp vanilla extractÂ
- 1/4 cup egg whitesÂ
- 1 tsp olive oil
Icing :Â
-2 tbs greek yogurtÂ
-2 tbs Philadelphia cream cheeseÂ
-1 scoop Vanilla Marine CollagenÂ
-1 scoop powdered sugar
-1/2 tsp almond extractÂ
-1/2 tsp vanilla extractÂ
Preparation :
- Add all the dry ingredients to a bowl and mix
- Add the grated carrots, applesauce, vanilla, olive oil, egg white, and almond milk
- Pour into a muffin tin
- Bake at 350°F for 20â25 minutes.
