Mini apple donuts

Ingredients : 

-1 cup all-purpose flour or gluten-free
-1/3 cup coconut sugar
-1 tbsp ground flax
-1 tsp baking powder
-1 tsp cinnamon 
-1/2 tsp pumpkin pie spice
-pinch of salt
-1 egg
-1/2 cup apple cider-I used an apple cider which is pasteurized 
-1 tsp vanilla paste or extract 
-1 tbsp olive oil or melted butter 
-1 apple peeled, grated & excess moisture removed 

Preparation : 

  1. Preheat oven to 375°F 
  2. Add all of the dry ingredients into a large bowl and mix well
  3. Add the wet ingredients including the grated apples
  4. Using an ice cream scooper divide the batter into a mini muffin tin.
  5. Bake for 15-20 min or until golden. 
  6. In a small bowl, mix the cinnamon and sugar, then dip the warm donuts into the mixture to coat.
