Protein coffee muffins

For breakfast or snack...You need to try these delicious coffee protein muffins

Ingredients : 

- 1 cup rolled oats

- ½ cup vanilla protein powder

- 1 cup brewed coffee cooled

- 1 cup flour whole wheat or all-purpose

- 1 large egg

- ¼ cup honey or maple syrup

- 1 teaspoon baking powder

-½ teaspoon baking soda

- ¼ teaspoon salt

- ¼ cup coconut oil melted

- 1 teaspoon vanilla extract

Preparation : 

  1. Preheat your oven to 350°F
  2. In a bowl, mix together : oats, protein powder, flour, baking powder, baking soda and salt
  3. In a separate bowl, combine coffee, egg, honey, vanilla & coconut oil, mix until well blended. 
  4. Add the wet ingredients into the dry ingredients & mix well. 
  5. Pour the batter into the muffin tin & bake for 15-18 minutes
